Grilled Fish and Peppers

Serves: 8

1 cup Kraft Zesty Italian Dressing

2 tsp. crushed red pepper

1-1/2 lb. firm white fish filets, such as grouper, halibut or tilapia

2 each red and green peppers, seeded, each cut into 4 pieces

2 Tbsp. Kraft 100% Parmesan Grated Cheese

2 Tbsp. finely chopped cilantro

COMBINE dressing and crushed red pepper. Pour half the dressing mixture over fish in sealable plastic bag. Seal bag. Refrigerate 15 minutes to marinate. Place peppers in a separate sealable plastic bag. Add remaining marinade; seal bag. Shake bag gently until peppers are evenly coated.
REMOVE fish from marinade; discard marinade. Remove peppers from marinade, reserving marinade. Place peppers on grill over medium-high heat. Top with fish; cover grill. Cook 4 minutes; turn fish over. Brush with reserved marinade from peppers. Grill, covered, an additional 2 minutes or until fish flakes easily with fork.
REMOVE fish and peppers from grill. Let stand 3 minutes. Sprinkle with cheese and cilantro.

Try any of the following varieties of fish: grouper, halibut or tilapia. Available at most fish counters.
